Tortellini Casserole đŸ„˜


For every cheese lovers: Enjoy!

As a side note: this meal is nutritious and healthy but rather high in calories.


Ingredients:

  • 1 pack Tortellini (dry or pre cooked)

  • 50g eggplant

  • 50g Chinese cabbage

  • 1 garlic clove

  • 1 small onion

  • 100g Tofu

  • 250g sieved tomatoes

  • 100g cottage cheese

  • 100g (light-)cheese

  • 1 tbsp soy sauce

  • Olive oil

  • Salt, pepper, cumin, turmeric, tandoori spice mix



Instruction:

  1. Heat up olive oil in a pan. Add diced onion and garlic and sauté for 2 min. Add some scrambled tofu and season with 1 tbsp soy sauce. Mix well until the soy sauce is well combined with the tofu.

  2. Prepare the eggplant and Chinese cabbage. Add the eggplant after 1 minute and the cabbage after another 2 min. Cover the pan.

  3. In the meantime you can cook the tortellinis.

  4. After 5 min season the veggies and tofu with salt, pepper, cumin, tandoori spice mix and tandoori. Mix well and lower the heat. Add the sieved tomatoes and cottage cheese and stir well.

  5. Add the drained Tortellinis. Cover with cheese and bake in the oven at 180°C for 10-15 minutes. Please check if you can put your pan into the oven first.

  6. Let cool down and enjoy!
