Spicy Peanut Shrimps đŠÂ with Spaghetti đ„°
Delicious, high protein and a full of nutrients. Go try this recipe for your next dinner!
Ingredients:
80g whole wheat spaghetti
50g eggplant
50g zucchini
50g chinese cabbage
115g frozen shrimps
150g low fat yogurt
20g peanut butter
1 garlic clove
1 tbsp olive oil
Salt, pepper, cumin, tandoori spice mix
Instruction:
Cook pasta in boiling salt water until aldente.
Heat up olive oil in a pan. Dice the garlic and add to the oil. Sauté for 1 min.
Dice the eggplant and zucchini into equal sized cubes. Add to the sautéed garlic, cover the pan with a lid and let cook for 3 min.
Slice the Chinese cabbage into small pieces and add to the eggplant and zucchini mixture after the 3 min.
Cover again. After 3 more minutes, season with salt, pepper, cumin and tandoori spice mix. Then add the frozen shrimps and fry from each side.
Add the yogurt and peanut butter. Stir well. Now add the cooked spaghetti and combine well.
